Vegan Oyster Mushroom Salad.
The Oyster mushrooms is the star of the show in this recipe. As the Oysters are the meat substitute, I will focus on their preparation. Use your own salad or Caesar salad recipe.
Ingredients
1 tbsp of olive oil
1 tbsp of butter
150 grams Oyster mushrooms
Marinade
1 1/2 tbsp tamari or soy sauce
1 tsp apple cider vinegar
1-2 tsp maple syrup
1/2 garlic clove, grated
1 tsp paprika powder
Salt & Pepper.
Instructions
1. Mix together the marinade ingredients in a jar.
2. Add oil and butter to a pan and bring to a medium high heat.
3. Place thickly sliced mushroom in the pan.
4. Simmer until golden. Use a spatula to squeeze the moisture out of the mushrooms to create a nice crusty meaty finish.
5. Use a kitchen towel to wipe off any moist that gathers in the pan. Do this process a few times until both sides look nice and golden. Add more oil if they stick to the pan.
6. Add the marinade to the pan and let the mushrooms get shiny and juicy on both sides.
7. Toss all ingrediency together and top with your preferred herbs and freshly ground black pepper
